Monkfish are large, deep-water fish that are members of the genus Lophius. Their tail meat has a very mild, slightly sweet taste and firm texture which makes them a good alternative for lobster and scallops.
The Atlantic cod is a benthopelagic fish of the family Gadidae. It has lean, moist white meat with a dense, but very flaky texture and mild flavor. Cod are a good low-fat source of protein, vitamins, and minerals.
Our cod are trawl caught year-round by company vessels in the Grand Banks and Gulf of Maine.

Hake is in the same taxonomic order (Gadiformes) as cod and haddock. Hake has a mild yet sweet flavor and a lean white to off-white flesh.
